Cauliflower Mashed "Potatoes"

Ingredients:

3 Cups Cauliflower
1 Cup Cashews
1/2 Cup fresh squeezed lemon juice
1/2 tsp Thyme
1 T minced garic
1 T Celtic sea salt

Preparation:

1. Put all ingredients in food processor
2. Blend until creamy

Celery-Apple Breakfast

A fresh and different sort of breakfast containing something green.

Ingredients:

3 or 4 large stalks of celery
one pink lady apple
small handful raisins
1 banana
1 lime
1/4 cup water

Preparation:
Coarsley chop celery and apple and place in bowl.
Sprinkle raisins over top.
Blend banana, water, and lime, then pour over top.

Sweet Potato Soup

Ingredients:

Sweet Potato, peeled & chopped
1/2-1 Apple, peeled & chopped
1-2 Garlic cloves
1-2 cups Water
Dash Salt
Cinnamon

Preparation:

Blend all ingredients
Top with cinnamon

Strawberry Cream Pie

Ingredients:

• 1 C fresh strawberries
• 1/2 C coconut oil
• 1/2 C raw cashews
• 1 T vanilla extract
• 1/4 C raw agave nectar
• 1 dash Celtic Sea Salt

Crust

• 3/4 C crushed pecans

Preparation:

1. Grind nuts in food processor
2. Pour nuts in bottom of pie pan
3. Blend filling ingredients in blender (or food processor) (blender = creamier)
4. Pour on top of pecans carefully
5. Refrigerate for 3 hours


Variations: Use blueberries or pineapples instead of strawberries.

Corn Off The Cob

Ingredients:

2 ears of corn
1/4 red pepper, chopped small or sliced thin
1/4 Onion, chopped small
1 clove of Garlic, crushed
1 stalk of Celery, cut into small pieces
1 T Olive oil
4 T Bragg's Liquid Aminos


Preparation:

Cut corn off of the cob
Add remaining ingredients
Toss gently

Raw "Fried" Tomatoes

Ingredients:

Tomatoes, sliced
Sesame seeds
Flax seeds
Olive oil
Sea salt
Garlic powder
Black pepper


Preparation:

Slice tomatoes thin
Grind sesame seeds into a powder
Add a little flax seeds to powder
Add a little olive oil
Add sea salt
Add garlic powder
Add black pepper
Mix to coat tomatoes
Dehydrate at 110 degrees for 4 hours

Spinach

Ingredients:

1-2 bunches fresh spinach
1/2 lemon or lime
1 onion, sliced thinly or chopped fine
1/2 red, orange or yellow pepper, sliced thinly
1 clove garlic, crushed
4 tablespoons Bragg's Liquid Amonos
1 - 2 capfuls olive oil

Preparation:

Slice spinach into thin ribbons
Squeeze lemon or lime juice over spinach; toss
Add onions, peppers and garlic
Add Bragg's
Pour olive oil on top and toss again


Variation: add sliced mushrooms

Easy Apple Salad

Ingredients:

1 apple, chopped into bite-size pieces
Juice of 1/2 lemon
Handful of raisins
Handful of walnuts, broken
Handful of pecans, broken
Agave or honey to taste

Preparation:

Chop apple into bite-size pieces
Squeeze lemon juice on them so they won’t turn brown
Add raisins, walnuts and / or pecans
Add agave or honey
Toss

Banana Split

Yield: 4 servings
Time: 5 minutes

Ingredients:
• 2 bananas, sliced
. ¼ C pineapples, chopped small
. ¼ C strawberries, cut into pieces
. ¼ C cashew sauce
. 1 T chopped walnuts or pecans for each banana split

Sweet Cashew sauce:
½ C cashews
½ C water
¼ C agave

Preparation:

1. Prepare Sauce:

a) Blend cashews and water
b) Add agave
c) Blend until smooth.
d) Adjust ingredients to taste.

2. Assemble banana split.
a) Split bananas and put on a plate at the bottom
b) Put pineapples, strawberries and any other fruit on top of bananas
c) Put cashew sauce on top of the fruit
d) Put nuts on top of the cashew sauce
